and today I'm gonna show you how to make

a classic chocolate mousse.

This is decadent, airy, and intensely chocolatey.

This is absolutely a romantic and special occasion desert.

You will need three mixing bowls for this recipe.

In the first heat=proof bowl,

combine six ounces of bittersweet chocolate,

six ounces of unsalted butter,

and a quarter cup of strong coffee.

Or you can use espresso.

Now heat medium sauce pan with about two inches

of simmering hot water.

Place your mixing bowl with the chocolate

over the saucepan of simmering water

so the bowl is just over the steam

and not touching the water.

Stir that together until the chocolate

is melted and completely smooth,

then take it off the heat.

I have separated four large eggs

and in the second mixing bowl combined four egg yolks

with half a cup of sugar and a teaspoon

of vanilla extract.

Whisk that to combine,

then place the bowl over the saucepan of boiling water

and whisk until it's thickened, hot to the touch,

and lightened in color.

Dip a spoon into the mixture

and run your finger across it.

You'll know it's ready if it does not ooze.

(upbeat music)

Take that off the heat and stir

the chocolate mixture into the egg yolk mixture.

Continue mixing until it's well blended.

(slurping)

In the third mixing bowl add four egg whites

and beat just until foamy.

Then gradually add one tablespoon of sugar

and continue beating until medium peaks form.

Fold the egg whites into the chocolate batter,

1/3rd at a time folding to incorporate

between each addition.

Once all of the egg whites are in,

fold just until the mousse is smooth and even in color.

Divide the chocolate mousse mixture

between eight four ounce ramekins.

Then cover and refrigerate for at least two hours

or ideally, overnight.

And you can make this chocolate mousse

two to three days in advance so this

is a make-ahead dessert.

Once your chocolate mousse is chilled

and you're ready to serve,

make the whipped cream.

In a medium mixing bowl, beat together one cup

of heavy whipping cream with a tablespoon of sugar

and half a teaspoon of vanilla extract

just until medium peaks form.

(Natasha squeals)

All right, these are well-chilled.

They are set and all we have left to do

is put on the topping and enjoy them,

so that's exactly what we're gonna do.

All right, we're gonna start out with that whipped cream.

Ooh, and these are beat to medium peaks

because you want that soft set look

on top of the chocolate mousse.

Mm, okay here we go.

And a big ole generous dollop on top of each one.

I'm excited.

'Kay, here we go.

All right, and I love adding some fresh raspberries

because chocolate and raspberries to me is like (slurping).

It works, okay?

Let's just put it that way.

So we'll put two on each one.

And raspberries are also very sweet for Valentine's Day.

Or a date night in.

Okay, and that's not all.

Next, we are gonna add some freshly shaved chocolate

because we need a little more chocolate.

All right, so.

And like this is the easiest way

to get chocolate curls is just a hunk of chocolate

and a potato peeler.

Just watch the magic.

All right.

Let's do this taste test because I cannot

wait any longer.

I was very patient while these were in the fridge.

Okay, here we go.

All right, and then with every bite

you wanna get some of the cream and some of the mousse

because the cream actually balances

the mousse really well.

Look at that mousse.

It is so whipped and fluffy.

Mm, mm.

(Natasha hums)

Wowee.

(Natasha laughs)

This just made my day.

Oh my goodness, it is intensely chocolatey.

And it's whipped and velvety smooth at the same time

and that little bit of coffee really amps

up the chocolate flavor.

Wow, this is as classic and as good as it gets.

Hello everybody and welcome to our journey through Storybook Land.

My name is Allie and I'm going to be your captain here aboard the Snow White.

For your safety, please remain seated at all times.

Keep those hands, arms, feet, and legs inside the boat.

And do supervise small children....

We wouldn't want any unexpected turns throughout our journey.

Our story today begins with us entering inside the jaws of Monstro the Whale.

This is the whale that in fact swallowed Geppetto and Pinocchio.

But no need to be alarmed...

This is only our entrance into the magical

and the very wonderful Storybook Land.

Right up ahead, we have the village where the 3 Little Pigs live.

And looking on over just to our lefthand side

we do have the cave where the Big Bad Wolf himself lives.

He's always trying to swim across the canal to get over to the little pigs' houses

which are made out of straw, wood, and

100% wolf proof guaranteed bricks.

Just around the river bend we have the quaint English village where Alice lives

where she fell down, down, down the rabbit hole.

into Wonderland, where things became curiouser and curiouser on that golden afternoon.

And in places such as London Park, where Peter Pan did in fact take the Darling children off the NeverLand

with help from Tinkerbell and her magical pixie dust.

Here in Storybook Land, pixie dust is very important

and is what powers our boat throughout our whole entire magical journey.

Speaking of magical journeys

we have just arrived at the enchanting city of Agrabah

where a street rat named Aladdin first fell for Princess Jasmine, later stealing her heart.

But with the power of love and maybe just a little help from the Genie

they are now happily married and living all the way up in the Sultan's palace

with of course their little friend Abu to keep them company there.

We are now traveling under the rose petal archways

the same archways where Aladdin took Princess Jasmine on their first ever

magical carpet ride, going over, sideways and under, to a whole new world...

But, as you can see, stories also have their darker sides as well.

Such as the mysterious Cave of Wonders.

This is where Aladdin first met his friend the Genie

What someone make a wish like Aladdin and see if it comes true...

Looking on over just to the right, we can see the small village where Snow White first met the Seven Dwarfs.

They gave her shelter in exchange for her kindness.

And just to our left sits the Blue Chateau, where Cinderella lived with

her evil stepmother and stepsisters.

But no need to worry...

She fled all the way up that hill to that beautiful palace, where she met

her Prince Charming at the Royal Ball.

If you all look close enough, you might be able to notice that magical pumpkin carriage

just on the bridge right below the castle.

This bend on our journey might just make you a little bit sleepy

for this is the giant patchwork quilt.

This giant beautiful quilt was inspired by the 1933 Silly Symphony called Lullaby Land.

And if you folks look all around you, you might be able to notice that all the plants here are tiny.

They are all under Tinkerbell's enchanting pixie dust.

Keeping them forever young, just like the Lost Boys in Neverland.

This is why we love it so much here in Storybook Land.

There are so many stories and adventures to bee seen and even told here.

Such as the Tales of the Wind and the Willows, which of course includes Mr. Toad.

Mr. Toad now is notorious for taking those crazy and unexpected rides to nowhere in particular.

See that road right there?

It leads to, well, nowhere.

And stories filled with magical kingdoms such as Arendelle, where Anna and Elsa live.

Where they met their friends Kristoff, Olaf, and Sven on their very snowy adventures.

And up ahead of course is the small Alpine village where Geppetto had his wood carving workshop

and he wished upon a star for his puppet Pinocchio to turn into a real boy.

And as our story slowly comes to an end

we get to go right next to Prince Eric's castle

This is where Ariel first took her wobbly steps onto land

As her story did in fact start under the sea in Atlantica

with her father, King Triton, sending her to live happily ever after.
