TED: California cuisine is very much, like,
this melting pot of things.
It's something that's kind of intangible, in some ways.
It was looking out the window and seeing all of these sights as you're eating.
It heightens the whole experience.
Literally, the purpose is going for food.

JOEL: You're seeing the freshness of everything.
I think when people think California, they think produce, they think fresh, they think
clean, they think light.
♪♪
CHRISTIAN: Local produce and local ingredients,
the freshest ingredients in season through unique techniques.
JEAN: California is unique, and we're able to have some products that normally places
offer the same quality.
The fresh items are from scratch, that's the secret to get such a great items and well-appreciated
dishes.
CHRISTIAN: To me, it isn't a surprise anymore, because we're actually able to pick up local
produce and local ingredients.
JOEL: It's been a really great experience, especially with the focus on wines and food.
You know, Los Angeles, Southern California, they have wide variety of great produce, great
wineries.
JEAN: It is a new adventure.
California is a great leader in wine production.
Therefore, we have an opportunity to try all the wines from different regions of people
and areas in California.
Aromatic and perfume wines are to give a hint of Californian touch.
JOEL: It almost makes the food taste better, because of the climate that you're in, because
of the company that you're in.
To be able to experience that all in one cruise is something very special.
DAVE: Wine and food has absolutely everything to do with the California Coast.
When you look at the Princess tour program, for example, in every port of call, you will
see winery tours, and when you take the best winery tours, they're going to include food.
You need food to go with wine, of course.
TED: Growing up in Santa Barbara, you're talking about wine country, so the food really represents
that.
There's goat cheeses and fresh cheeses and tons of wine, and the food is very kind of
farmhouse-esque in some ways.
CHRISTIAN: We want the ingredient to speak for itself on the plate, so we do very minimal
things through simplistic techniques to be able to showcase the flavor profiles that
we're trying to achieve.
JOEL: Princess Cruises has been able to translate that philosophy about California food and
put it on something that's mobile.
I never went on a cruise before, and now I think I definitely will plan a vacation around
what the cruise has to offer.
