Today I'll show you a classic from the sushi cuisine:

California inside-out.

For that we need:

A nori leaf,

masago,

cream curd cheese,

avocado slices

and a slice of surimi.

As usual, wet your hands with the vinegar water.

Now spread a hand full of rice evenly on the nori leaf.

Never press too firmly.

Always spread it lightly with the tips of your fingers.

That will do.

Now we take our knife, and spread some masago evenly on the rice.

Now comes the trick for the inside-out roll.

Simply cover the nori leaf and the rice with plastic wrap.

Roll up the end of the wrap a little.

Now we take our bamboo mat, put it on top and press it firmly.

Make sure to have a flush edge at the bottom.

Then turn everything around.

And already: inside-out.

Again, a line of wasabi.

Not too much, not too little.

Then our prepared avocado slices.

Now our slice of surimi.

Stop!

Don't forget to remove the plastic wrap.

Finally we take our curd cream cheese.

Cut out a little piece.

You can use Philadelphia or another cream cheese as well.

As always, wet your hands a little.

Hold on to the filling.

Carefully turn it over.

Press it down with the mat.

Lift off the mat, roll on and press again.

Ensure that the maki gets a square shape.

Now roll on a quarter rotation.

Press it down again.

Again a quarter rotation and press it.

And already we have a perfect california inside-out roll.

Please don't unwrap it. First we cut it, then it's unwrapped.

Wet your super sharp Global knife, and cut it through in the middle.

Then cut through the middle again,

and halve the halves once more.

Our perfect maki is finished.

Now simply unwrap it.

Carefully remove the wrap.

And serve it on a plate.

Add some ginger and wasabi.

A little garnish.

Our california inside-out is finished. Enjoy your meal!
